Pineapple Chip Dip

Mackenzie had a recipe night and needed to bring something.. She said " Is there something quick and easy." So this is what I suggested. I just had to post this recipe this is one of my best friends family recipe (top secret) and so quick and easy. My girls could eat this non stop if I would let them. Its kind of mind blowing that it is so simple but so dang good. I guess the mix of sweet with salty.. Whatever it is I'm addicted. Thanks Angie for letting me post your top secret recipe... :) Also this is a great dip to take camping....





Pineapple Chip Dip


2 Cream Cheese (Softened)

1 20oz can crushed pineapple (do not drain)


Tip: To soften cream cheese I put the foil package of cream cheese in a large plastic cup fill with hot tap water and let sit for about 5-8 minutes. Viola its softened and perfect for any recipe.



*Mix cream cheese and pineapple with a fork. (Will have a frothy appearance almost like cottage cheese.)

Serve with RUFFLE POTATO CHIPS (Must serve with these that is the key to success. lol)

Chile Verde

This is a family recipe and my husbands favorite. Having the Mexican basket available in the bountiful baskets this week inspired some Mexican cooking. The tortillas this week were awesome. We always serve this with beans,(I posted a crockpot refried bean recipe that was so easy and yummy from realmomskitchen.com)fried potatoes and also a spanish rice if you like. I had alot of extra so I just freeze in gallon freezer bags and is great for breakfast with eggs and tortillas. Enjoy!!

Chile Verde

1-2 lbs Pork. (Pork shoulder roast cut up into cubes) I always add alot of meat because my family likes the meat. I just try to find a good size roast
Olive oil
½ onion diced
Flour
S&P
*Put some flour in a bag and coat the meat cubes, Sauté the meat and onions in the olive oil until brown. S&P
Add 1-2 cans diced tomatoes (with chilies)
1 small can diced fire roasted chilies.
Add chicken broth (I usually don't have any on hand so I will just add hot water and chicken bouillon.
Simmer until tender
Season to taste (garlic salt, S&P,season salt)

CrockPot Refried Beans
3 cups of dry pinto beans (rinsed)
1 onion, diced
9 cups of water
5 t salt
1 3/4 t pepper
2 T minced garlic
1/8 t ground cumin
Put all the ingredients in a crockpot and cook on high for about 8 hours.
After they are done, drain all of the liquid out and SAVE THE LIQUID!!
Mash beans with a potato masher or whatever you mash with. Add liquid, a bit at a time, to desired consistency, but remember you want them a little runny because they thicken over time. (makes about 6 cups)

Swiss Chard

So the Results are in!!!
The recipe was a success. :)





Everyone enjoyed it and Madison even asked for seconds. As you can tell it was all over her face. The swiss chard ribs with cream and pasta recipe was really good. I did make some alterations to the recipe. The swiss chard recipe was a little spicy but was not to bad. My kids didnt love the swiss chard recipe but they really liked the swiss chard ribs with cream and pasta.




Sautéed Swiss Chard Ribs with Cream and Pasta Recipe

Ingredients:
1 lb swiss chard, yielding 2 cups of chopped ribs
1/4 cup (half a stick) butter
3/4 to 1 cup heavy cream (I used 2 cups)
Enough dry pasta to make about one quart of cooked pasta (I used spaghetti)
Salt and pepper

Separate the ribs from the greens. Cut the ribs into 1/2-inch to 1-inch pieces. Blanch the ribs in lightly salted boiling water for 3 minutes. Melt butter in a saucepan on medium heat. Add the drained, blanched ribs and simmer for 4 minutes. Add heavy cream and cook until cream reduces by two-thirds. (I added about 1 Tblsp cornstarch dissolved in 2 Tblsps. water to thicken a little)
While the cream is reducing, cook up your pasta according to the pasta's package directions.
Mix creamed chard with pasta. Season lightly with salt and freshly ground pepper.


Serves four.

Swiss Chard Recipe

Ingredients:

1 large bunch of fresh Swiss chard
1 small clove garlic, sliced
2 Tbsp olive oil
2 Tbsp water
Pinch of dried crushed red pepper
1 teaspoon butter
Salt

Rinse out the Swiss chard leaves thoroughly. Remove the toughest third of the stalk, discard or save for another recipe (such as this Swiss chard ribs with cream and pasta). Roughly chop the leaves into inch-wide strips.
2 Heat a saucepan on a medium heat setting, add olive oil, a few small slices of garlic and the crushed red pepper. Sauté for about a minute. Add the chopped Swiss chard leaves. Cover. Check after about 5 minutes. If it looks dry, add a couple tablespoons of water. Flip the leaves over in the pan, so that what was on the bottom, is now on the top. Cover again. Check for doneness after another 5 minutes (remove a piece and taste it). Add salt to taste, and a small amount of butter. Remove the swiss chard to a serving dish.

Swiss Chard HMMM!!!





We received our 2nd Bountiful Basket today and I can't believe all the stuff. Its so nice not to have to go to the store to get produce. We received swiss chard this time in our basket and intrigued I decided we were going to experiment with dinner tonight. I'm trying two different recipes (Sautéed Swiss Chard Ribs with Cream and Pasta and Sauteed Swiss Chard ) I will post later if they turned out and I will post the recipes if the dishes were acceptable by my kids. Thank heavens Lance is not home he would Freak (LOL) My meat and potato guy :) doesn't like to step out of the box........

Chocolate Chip Cookie Delight


I entered this recipe to Taste of Home (one of my favorite magazines). And they published it in there hardbound cookbook. This is so good and really great for those barbeque's coming up and family gatherings. It serves a lot and taste so good. Kind of like a chocolate chip cheesecake. There are several recipes similar but use a butter crust or graham cracker crust. Chocolate Chip Cookie Delight

15 Servings

Prep: 35 min. + chilling

Ingredients

1 tube (16-1/2 ounces) refrigerated chocolate chip cookie dough
1 package (8 ounces) cream cheese, softened

1 cup confectioners' sugar
1 carton (12 ounces) frozen whipped topping, thawed, divided
3 cups cold milk
1 package (3.9 ounces) instant chocolate pudding mix
1 package (3.4 ounces) instant vanilla pudding mix
Chopped nuts and chocolate curls, optional

Directions

Let cookie dough stand at room temperature for 5-10 minutes to soften. Press into an ungreased 13-in. x 9-in. baking pan. Bake at 350° for 14-16 minutes or until golden brown. Cool on a wire rack.
In a large bowl, beat cream cheese and confectioners' sugar until smooth. Fold in 1-3/4 cups whipped topping. Spread over crust.
In a large bowl, whisk milk and pudding mixes for 2 minutes; let stand for 2 minutes or until soft-set. Spread over cream cheese layer. Top with remaining whipped topping. Sprinkle with nuts and chocolate curls if desired.
Cover and refrigerate for 8 hours or overnight until firm. Yield: 15 servings.


Nutrition Facts: 1 piece (calculated without nuts and chocolate curls) equals 365 calories, 17 g fat (10 g saturated fat), 29 mg cholesterol, 329 mg sodium, 47 g carbohydrate, 1 g fiber, 4 g protein.

This is a recipe I found on Real Mom kitchen blog/website. (http://realmomkitchen.com/) Me and Madison decided we needed to make some cookies and deliver them to some friends who maybe needed a little cheering up. I love love love this website. It is like my own personal recipe box. So many fun recipes I just want to bake my little heart out but can't put the pounds on so every now and then I will be experimenting with these wonderful recipes. I'll have to run forever on the treadmill tonight to make up for the amount of cookies I ate today but they were so good and so easy. My kind of recipe.














Easy Sugar Cookies

2 3/4 C all-purpose flour
1 t baking soda
1/2 t baking powder
1 cup butter, SOFTENED
1 1/2 C white sugar
1 egg
1 t vanilla extract

(** I added a dash of salt to enhance flavor)

1. Preheat to 375 degrees. In a small bowl, stir together flour, baking soda, and baking powder. Set aside.

2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.

3. Bake 8-10 minutes, or until golden. Let stand on cookie sheet tow minutes before removing to cool on wire racks. (I think it made around 2-3 dozen)

Frosting

1/2 cup butter; room temp
1/2 cup shortening
1 tsp vanilla
pinch of salt
4 cups powdered sugar
5 Tbsp milk (** I used whipping cream)
food coloring (if desired)
(** I added a tsp of almond extract also)
For frosting combine butter and shortening until smooth and creamy. Add vanilla and salt. Add powdered sugar in 1-2 cup increments until combined, then add milk & mix until smooth and spreading consistency. Spread over cooled cookie.

First Bountiful Basket in Grace


Today was the first Bountiful
Baskets in Grace.WOW what an organization.We received
some great stuff this time. Pineapple,oranges,broccoli,apples,bananas,yams,blackberries,
strawberries, lettuce,onion,tomatoes,squash & corn



I'm truly amazed at all the volunteers.
Over all I believe it was a great first
time with all the problems
(Late truck due to bad weather, No baskets)
All the volunteers stepped up and
we got it done. Hopefully it run alot smoother next time. :)
